HA’: Carlos Gaytán’s Gastronomic Experience at Xcaret

HA’, located inside Hotel Xcaret Mexico, is a high-end culinary experience open to the public, not exclusively for guests of Hoteles Xcaret. It is an invitation to explore the senses, where contemporary Mexican cuisine is transformed into art under the vision of Carlos Gaytán, the first Mexican chef with a Michelin star both inside and outside Mexico.

In an elegant, intimate, and multisensory setting, HA’ combines gastronomic excellence with an architectural design that evokes the fluidity of water—the element that gives the restaurant its name, as ha’ means water in the Mayan language. Every detail, from the lighting to the tableware, has been carefully selected to complement the experience.
